Easy, terrific recipe for pesto

  • 1 Food processor

Ingredients
  

  • 2 cups fresh basil leaves, packed Substitute spinach for basil, whole or in part
  • 1/2 cup freshly grated Romano or Parmesan cheese (about 2 oz)
  • 1/2 cup extra virgin olive oil
  • 1/3 cup pine nuts Substitute walnuts or pistachios
  • 3 cloves garlic, minced (about 1 tbsp)
  • 1/4 tsp salt, to taste
  • 1/8 tsp freshly ground black pepper, or more to taste

Instructions
 

  • Pulse basil and nuts together in processor several times.
  • Add garlic and cheese to processor and pulse several times more.
  • Slowly pour olive oil into processor while it's running.
