Easy, terrific recipe for pesto
Equipment
- 1 Food processor
Ingredients
- 2 cups fresh basil leaves, packed Substitute spinach for basil, whole or in part
- 1/2 cup freshly grated Romano or Parmesan cheese (about 2 oz)
- 1/2 cup extra virgin olive oil
- 1/3 cup pine nuts Substitute walnuts or pistachios
- 3 cloves garlic, minced (about 1 tbsp)
- 1/4 tsp salt, to taste
- 1/8 tsp freshly ground black pepper, or more to taste
Instructions
- Pulse basil and nuts together in processor several times.
- Add garlic and cheese to processor and pulse several times more.
- Slowly pour olive oil into processor while it's running.
