Easy Fettucine and Artichoke Recipe
Delicious pesto dish with mushrooms, and tomatoes

Fettucine with Artichokes
Really rich pasta dish. Great for company or family dinners. (Used bowtie pasta in the dish made in the photograph.) This can be served hot or cold.
Ingredients
- 8 slices bacon, in 1/2" sizes
- 3 tbsp butter
- 2 garlic cloves, minced
- 2 cups mushrooms, sliced
- 2 medium tomatoes, peeled, seeded, chopped
- 1 8 oz jar artichoke hearts
- 1/3 cup sour cream
- 1/2 cup light cream
- 8 oz fettucine
- 2 tbsp olive oil
- 2 tbsp pesto sauce
- 1 tbsp parsley, minced
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- Pepper
- Parmesan cheese
- Hot sauce, to taste
Instructions
- Cook bacon. Drain.
- Melt butter in pan. Add garlic, onion, mushrooms, and tomatoes. Saute.
- Add artichokes, bacon, sour cream, and light cream. Heat. Do not boil
- Cook pasta. Drain. Return to pot.
- Add olive oil and pesto sauce. Toss to coat.
- Add seasonings. Add vegetable mixture.
- Add favorite hot sauce to taste. We like Salt Lick's (mild) Spicy BBQ sauce
- Toss with parmesan.
