Breakfast Bread, like Publix, for bread machine

Publix makes a wonderful breakfast bread that they can't keep in stock. Filled with dried fruit, this recipe is easy to make with a breadmaker.

Equipment

  • 1 breadmaker

Ingredients
  

Wet Ingredients

  • 2 1/4 tsp 1 packet instant yeast
  • 1 cup warm water
  • 2 tbsp plum pastry filling (see below)
  • 2 tbsp vegetable oil
  • 2 tbsp sugar
  • 1 1/2 tsp honey
  • 1 tsp salt
  • 3/4 tsp ground cinnamon
  • 1 egg beaten

Dry Ingredients

  • 3-3 1/4 cups unbleached all-purpose flour
  • 4 tsp wheat gluten

Dried Fruit and Nuts

  • 1/2 cup raisins
  • 1/2 cup walnuts, coarsely chopped
  • 3 tbsp dried cranberries
  • 3 tbsp dried apricots, chopped
  • 3 tbsp dried apples, chopped

Instructions
 

Wet Ingredients

  • In a mixing bowl, dissolve yeast in 1/4 cup warm water and mix well. Add 3/4 cup more warm water, plum filling, oil, sugar, honey, salt, cinnamon and egg. Mix well. Pour into bottom of bread machine.

Dry Ingredients

  • Add the flour and wheat gluten on top of the wet ingredients in the bread machine. Set the bread machine to REGULAR WHITE BREAD CYCLE, 1 1/2 POUND LOAF, MEDIUM CRUST.
    Monitor dough as it mixes for the first few minutes and add more flour or water as needed, a tablespoon at a time, to form a smooth ball of dough. It should be firm enough to hold its own shape and not sticky. It should not be so dry that it is crumbly.

Dried Fruit & Nuts

  • Mix the fruit and nuts together in a bowl. Add to bread machine when it beeps to add dried fruit near the end of the kneading cycle. This usually happens 5 to 10 minutes before the end of the dough kneading cycle.
    After bread is baked, remove from bread machine and baking basket. Allow to cool before slicing.
    Makes one 1 1/2 pound loaf of Breakfast Bread like Publix makes.

Notes

I make the plum pastry filling ahead and freeze several packets in two tablespoons each.
