Simple Fruit Cobbler Recipe

This recipe is easy to do. Use with any fruit. Great for camping where simplicity is key. Great crowd-pleaser for potlucks.

Berry Cobbler
This is an easy recipe. You can make it ahead, or mix up the dry, the topping, and the wet ingredients separately (refrigerate the wet ahead of time). When company arrives, just mix the wet and dry together, put the berries in the bottom, top with batter, then topping, and bake. It cooks while you have dinner.
Ingredients
Dry Ingredients
- 1 cup flour
- 1 cup sugar
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp salt
- 1 tbsp baking powder
Wet Ingredients
- 2 eggs
- 1 cup milk
- 3/8 cup canola oil
Topping
- 1/2 cup oatmeal
- 2 tbsp brown sugar
- 4 tbsp butter
- 1 cup pecans, chopped
Instructions
- Mix dry ingredients together.
- Mix wet ingredients together,
- Mix wet and dry together.
- Place 4-6 cups of berries, apples, or other cut-up fruit in bottom of 9"x13" greased pan.
- Top fruit with batter.
- Mix topping ingredients in food processor. Add to top of batter.
- Bake at 350 degrees for 45 minutes. Let cool.
Notes
Great with ice cream. Sometimes I take a 1/2 cup of sour cream and mix a couple of teaspoons of sugar with it for a topping.
