Favorite Oatmeal Cookie Recipe
Coconut, pecans and dates make no-butter snack special
Originally, this recipe called for a ton of butter, so we did a vegetable oil swap and love the difference. Dates make cookies special both in texture and sweetness, keeping everything together. Substituting Amaretto for vanilla just kicks up that elegant taste. Rolling teaspoonfuls in sugar packs the shape so they come out perfectly round and the light sugar coating adds a little sweet crispness and crunch.
Chewy Oatmeal Cookies
Ingredients
- 1 cup brown sugar
- 1 cup white sugar
- 3/4 cup canola oil
- 2 eggs
- 1 tsp vanilla Option: substitute Amaretto or almond flavoring
- 1/2 tsp salt
- 1 tsp soda
- 1 cup flour
- 1 cup raisins
- 1 cup dates, pitted
- 1 cup coconut
- 1 cup pecans, chopped
- 4 cups oatmeal
Instructions
- Cream sugars and oil
- Add beaten eggs and vanilla. (I like to substitute a glug of Amaretto for the vanilla.)
- Sift salt, soda and flour together.
- Add to creamed mixture.
- If you are using food processor, it's easier to chop nuts first, then chop raisins and dates together.
- Add oatmeal and ground fruit, plus nuts and coconut. Mix well.
- Roll teaspoonfuls in sugar before dropping onto greased cookie sheets.
- Bake at 340° for 20 minutes.
