Chocolate Trifle

A decadent version of the popular fruit trifle, this dessert is an often-requested recipe for special occasions, such as birthdays. This recipe is a riff on Jamie Oliver's Epic Chocolate Trifle dessert. This one is easy to do in its simplest form.
You can also kick it up a notch by making elements of it from scratch. However you do it, it's sure to please.

Equipment

  • 1 Mixer
  • 1 Food processor
  • 1 large glass bowl for serving

Ingredients
  

Chocolate Brownie layers

  • 1 package brownie mix with water, oil, egg as package requires

Chocolate Pudding layers

  • 1 package chocolate pudding mix with milk as package requires

Mascarpone Cream layers

  • 2 eggs beaten
  • 1/2 cup fine or regular sugar
  • 1 cup heavy cream
  • 2 8 oz. containers of mascarpone

Additions between layers

  • 1 13.4 oz can Dulce de Leche
  • 1/2 cup Amaretto

Topping

  • 1 bar dark chocolate

Instructions
 

Brownie layers

  • Bake brownie mix as directed on package, using 11"x7" for shallow layers. Cool.

Chocolate pudding layers

  • Cook pudding as directed and chill.

Mascarpone cream

  • Stir eggs and sugar in heatproof bowl over pan of simmering water. Whisk for 8-10 minutes until you can pour mixture like a ribbon off a spoon. Temperature will be about 180 degrees. Allow to cool slightly.
  • In a large bowl, whisk the cream and mascarpone to soft peaks. Fold in a little egg mixture quickly, then add the rest. Cover and chill.

Assembly

  • Cut brownies into small pieces and use 1/3 to create the first layer in a large dish. It's nice to use a glass trifle dish to display the layers attractively. Save a handful of pieces to use on the top with chocolate shavings.
  • Spread 1/3 of the Amaretto over the brownie layer evenly.
  • Spread 1/3 of the mascarpone mixture on top of the brownie layer. Spread out nicely to the edges to see it from the outside of the bowl.
  • Whisk the Dulce de Leche and spread 1/3 of the can on top of the mascarpone layer. Spread to edges to be visible.
  • Spread 1/3 of the chocolate pudding over the Dulce de Leche. Again spread out to the edges.
  • Repeat the 5 steps from brownie to pudding layer twice more.
  • Topped with shaved chocolate.
  • Chill till ready to serve.

Notes

Substitute Chocolate Mousse, made from scratch if you like, for the chocolate pudding. 
I like to put this in the freezer, especially if serving outside when it’s warm, pulling it out shortly before serving to thaw enough to serve.
