An Easy, Delicious Baked Beans Recipe

Family and friends expect this traditional dish at summer potlucks

Here’s a simple, classic recipe for flavorful baked beans, made from scratch. While beans take several hours of soaking and cooking, supervision is minimal. Just do a little tasting and tweaking during the last hours of cooking.

Boston Baked Beans

Equipment

  • 1 crockpot

Ingredients
  

  • 3 cups pinto beans
  • 2 tsp salt
  • 3 tbsp molasses
  • 2 tbsp brown sugar
  • 1 tbsp balsamic vinegar
  • 1/2 tsp dry mustard
  • 1 14 oz. can diced or crushed tomatoes
  • 1/2 lb salt pork
  • 1 onion

Instructions
 

  • Rinse beans and remove any stones. Soak overnight in cold water.
  • Drain water and cover with fresh water.
  • Cook on stove till tender, about 1 hour.
  • Drain water and place beans in crockpot.
  • Add whole onion or chopped, if you prefer.
  • Add chunks of salt pork, large enough to remove after cooking.
  • Add salt, molasses, brown sugar, tomatoes, mustard and vinegar.
  • Cook at least 4 hours, checking seasoning.
  • Remove salt pork and onion.

Notes

Instead of salt pork, you might like to use cooked, chopped bacon or sausage.
You may prefer navy beans, but I’ve always used pinto.
