Rich and Charlie’s Italian Salad Recipe

This wonderful salad, slightly modified from a well known Italian restaurant chain in St. Louis, is easy to make and pleases everyone.

Ingredients
  

  • 1 head of iceberg lettuce
  • 1 head of romaine lettuce
  • 1 red onion
  • 1 can hearts of palm
  • 1 can marinated artichoke hearts
  • 1/4 cup roasted red peppers in oil, chopped
  • Parmesan cheese
  • oil
  • vinegar
  • salt, to taste
  • pepper, to taste

Instructions
 

  • Break up lettuce and romaine.
  • Slice onion, hearts of palm, artichoke hearts, and roasted peppers
  • Toss together with oil, vinegar, salt, pepper, and parmesan to taste.

Italian Salad with artichoke hearts and roasted red peppers

Variation: Add 1/4 cup pimientos and 1/4 cup dried cranberries.
I actually only use romaine without the iceberg these days. The original recipe called for a small jar of pimientos, but discovered the roasted red peppers gave the salad more of a slight kick we enjoy. Shown here: Mama Lil’s Roasted Red Peppers.
Great recipe for a crowd or potluck. Quick to do and easy to keep these ingredients on hand for last minute goodness.
