Prune Plum Filling or Plum Butter
Made as an ingredient in the Copycat recipe for Publix grocery stores' Breakfast Bread

- 2 cups prunes, pitted
- 1 cup water
- 1/4 cup orange juice
- 1 tsp orange zest
- 1/3 cup brown sugar
Combine first 4 ingredients in medium saucepan and bring to a boil for a minute.
Reduce heat to low to simmer, covered, for about 20 minutes. Stir occasionally.
Remove lid and let simmer 3-5 minutes to let liquid evaporate until only 3 tablespoons of liquid remain. Remove from heat.
Add brown sugar and stir to dissolve.
Blend mixture in food processor until smooth.
Let cool.
For the Publix Breakfast Bread recipe, I freeze individual packages of the plum filling; each one has 2 tablespoons of plum filling wrapped in cellophane.
