Chewy Oatmeal Cookies
Modified recipe to cut out butter, this oatmeal cookie treat is a favorite for all the nuts and fruit.

- 1 cup brown sugar
- 1 cup white sugar
- 3/4 cup canola oil
- 2 eggs
- 1 tsp vanilla Option: substitute Amaretto or almond flavoring
- 1/2 tsp salt
- 1 tsp soda
- 1 cup flour
- 1 cup raisins
- 1 cup dates, pitted
- 1 cup coconut
- 1 cup pecans, chopped
- 4 cups oatmeal
Cream sugars and oil
Add beaten eggs and vanilla. (I like to substitute a glug of Amaretto for the vanilla.)
Sift salt, soda and flour together.
Add to creamed mixture.
If you are using food processor, it's easier to chop nuts first, then chop raisins and dates together.
Add oatmeal and ground fruit, plus nuts and coconut. Mix well.
Roll teaspoonfuls in sugar before dropping onto greased cookie sheets.
Bake at 340° for 20 minutes.
