Chewy Oatmeal Cookies

Modified recipe to cut out butter, this oatmeal cookie treat is a favorite for all the nuts and fruit.

Ingredients
  

  • 1 cup brown sugar
  • 1 cup white sugar
  • 3/4 cup canola oil
  • 2 eggs
  • 1 tsp vanilla Option: substitute Amaretto or almond flavoring
  • 1/2 tsp salt
  • 1 tsp soda
  • 1 cup flour
  • 1 cup raisins
  • 1 cup dates, pitted
  • 1 cup coconut
  • 1 cup pecans, chopped
  • 4 cups oatmeal

Instructions
 

  • Cream sugars and oil
  • Add beaten eggs and vanilla. (I like to substitute a glug of Amaretto for the vanilla.)
  • Sift salt, soda and flour together.
  • Add to creamed mixture.
  • If you are using food processor, it's easier to chop nuts first, then chop raisins and dates together.
  • Add oatmeal and ground fruit, plus nuts and coconut. Mix well.
  • Roll teaspoonfuls in sugar before dropping onto greased cookie sheets.
  • Bake at 340° for 20 minutes.
