Vanilla Ice Cream

Equipment

  • 1 ice cream maker

Ingredients
  

  • 1 1/2 cups whole milk, well chilled
  • 1/2 cup granulated sugar
  • 1 1/2 cups heavy cream, well chilled
  • 1-2 tsp pure vanilla extract, to taste
  • 14 tsp Xanthan gum

Instructions
 

  • In quart jar with tight-fitting lid (Mason jars are great for this), combine milk and sugar until the sugar is dissolved.
  • Stir in heavy cream and vanilla to taste. Close and shake jar vigorously before adding to ice cream maker.
  • Turn on machine (make sure gel pack insert has been frozen at least 24 hours prior). Pour mixture into the freezer bowl through the ingredient port.
  • Let mix until thickened - approximately 25-35 minutes.

Notes

Note: Xanthan gum provides a little thickener for the ice cream. Try it without and see how it works for you.
