Vanilla Ice Cream

- 1 1/2 cups whole milk, well chilled
- 1/2 cup granulated sugar
- 1 1/2 cups heavy cream, well chilled
- 1-2 tsp pure vanilla extract, to taste
- 14 tsp Xanthan gum
In quart jar with tight-fitting lid (Mason jars are great for this), combine milk and sugar until the sugar is dissolved.
Stir in heavy cream and vanilla to taste. Close and shake jar vigorously before adding to ice cream maker.
Turn on machine (make sure gel pack insert has been frozen at least 24 hours prior). Pour mixture into the freezer bowl through the ingredient port.
Let mix until thickened - approximately 25-35 minutes.
