Jim’s Salmon Pasta Al Fresca

Jim’s Salmon Al Fresca
Easy, delicious main course recipe and a party pleaser.
Ingredients
- 2 tbsp olive oil
- 3 cloves garlic, chopped
- 1 cup carrots, chopped
- 1 cup mushrooms, diced (preferably portabella)
- 1 cup red bell pepper, diced
- 8 oz. cream cheese
- 8 oz. sour cream
- 3 cups cooked salmon
- 1 cup sundried tomatoes, diced (soak in water if you don't use ones in olive oil
- 1 cup green olives, chopped
- black pepper, to taste
- hot sauce, to taste
- nutmeg, to taste
- grated parmesan
Instructions
- Saute garlic and carrots in olive oil and butter. When carrots start to get soft, add red pepper.
- When red peppers get soft, add mushrooms and green olives.
- When mushrooms start to get soft, add cream cheese, sour cream and a small amount of cream or milk.
- Cook on low heat until sauce is blended.
- Add black pepper, hot sauce, and nutmeg to taste.
- Throw in 3 cups cooked salmon and dried tomatoes and warm through.
- Serve on favored cooked pasta with fresh grated parmesan.
Notes
Variations:Use 3 cups of fake crab for the salmon, as seen in these photos.Substitute smoked salmon for fresh by using about 1/2 cup of smoked salmon instead of 3 cups of fresh.
