Jim’s Salmon Al Fresca

Ingredients
  

  • 2 tbsp olive oil
  • 3 cloves garlic, chopped
  • 1 cup carrots, chopped
  • 1 cup mushrooms, diced (preferably portabella)
  • 1 cup red bell pepper, diced
  • 8 oz. cream cheese
  • 8 oz. sour cream
  • 3 cups cooked salmon
  • 1 cup sundried tomatoes, diced (soak in water if you don't use ones in olive oil
  • 1 cup green olives, chopped
  • black pepper, to taste
  • hot sauce, to taste
  • nutmeg, to taste
  • grated parmesan

Instructions
 

  • Saute garlic and carrots in olive oil and butter. When carrots start to get soft, add red pepper.
  • When red peppers get soft, add mushrooms and green olives.
  • When mushrooms start to get soft, add cream cheese, sour cream and a small amount of cream or milk.
  • Cook on low heat until sauce is blended.
  • Add black pepper, hot sauce, and nutmeg to taste.
  • Throw in 3 cups cooked salmon and dried tomatoes and warm through.
  • Serve on favored cooked pasta with fresh grated parmesan.

Notes

Variations:
Use 3 cups of fake crab for the salmon, as seen in these photos.
Substitute smoked salmon for fresh by using about 1/2 cup of smoked salmon instead of 3 cups of fresh.
